Recipe Ingredients:

  • 1 1/2 pounds ground chuck (80 percent lean) or ground turkey (90 percent lean)
  • Kosher salt and freshly ground black pepper
  • 1 1/2 tablespoons canola oil
  • 4 slices cheese (optional)
  • 4 hamburger buns, split; toasted, if desired

How To Make Grilled Burgers?

  1. Prepare the Burgers: Divide the meat into 4 equal portions (about 170g / 6 ounces each). Form each portion into a 3/4-inch-thick patty, creating a deep indentation in the center with your thumb. Season both sides of each burger with salt and pepper.
  2. Grill the Burgers (Grill Option): Preheat a gas grill to high, or heat charcoal until it glows bright orange and is covered in ash. Brush the burgers with oil. Place on the grill and cook for 3 minutes on the first side for beef or 5 minutes for turkey. Flip the burgers and cook for another 4 minutes for beef (or 3 minutes if adding cheese), or until desired doneness. Turkey burgers should cook for an additional 5 minutes on the second side until fully cooked.
  3. Grill the Burgers (Grill Pan Option): Heat a grill pan over high heat on the stove. Cook the burgers following the same timing as the grill instructions above.
  4. Grill the Burgers (Sauté Pan or Griddle Option): Heat the oil in a sauté pan or griddle over high heat until it begins to shimmer. Place the burgers in the pan and cook as instructed for the grill.
  5. Add Cheese and Serve: If using cheese, add it to the tops of the burgers during the last minute of cooking. Cover with a lid, close the grill cover, or tent with aluminum foil to melt the cheese. Place on toasted buns if desired and enjoy!

Recipe Tips:

  • Shape the Patties Carefully: Gently form patties with a slight indentation in the center. This helps them cook evenly and prevents puffing up in the middle.
  • Use the Right Meat: For juicy burgers, use ground chuck with 80% lean meat. For a leaner option, go with ground turkey at 90% lean.
  • Preheat the Grill or Pan: Ensure your grill, grill pan, or sauté pan is fully heated before placing the burgers on it to achieve a perfect sear and prevent sticking.
  • Avoid Over-Flipping: Flip the burgers only once. Constant flipping can make them lose their juices and end up dry.
  • Add Cheese at the Right Time: If you’re adding cheese, place it on top during the last minute of cooking and tent with foil or cover to melt it perfectly.

How To Store & Reheat Leftovers?

  • Refrigerate: First, let the leftover grilled burgers cool to room temperature. Place them in an airtight container and store them in the refrigerator for up to 3 days.
  • Freeze: Allow the grilled burgers to cool completely, then wrap each patty individually in plastic wrap and place them in a freezer-safe bag or container. Freeze for up to 3 months.
  • Reheat: Heat a skillet over medium heat, add a splash of water, cover, and reheat the burger for 3-5 minutes, flipping halfway to ensure even warming.
