How To Make Banana Bread Waffles with Bananas Foster Sauce?

  1. Preheat the oven: Set to 350°F and grease a 9-inch loaf pan with nonstick spray.
  2. Brown the butter: Melt butter in a saucepan over medium heat, stirring, until deep golden brown. Let cool slightly.
  3. Mix dry ingredients: In a small bowl, sift together flour, baking soda, salt, and cinnamon.
  4. Mash bananas: In a medium bowl, mash the bananas, then mix in granulated sugar, brown sugar, egg, and cooled brown butter.
  5. Combine everything: Add the dry ingredients and mix until just combined. Do not over-mix.
  6. Bake the banana bread: Pour the batter into the loaf pan and bake for 45-55 minutes, or until a toothpick comes out clean. Let cool for 15 minutes, then transfer to a rack to cool completely. Wrap and store overnight.
  7. Make the bananas Foster sauce: Melt butter in a skillet over high heat. Stir in muscovado sugar and cook until melted. Add rum and cook until almost evaporated. Whisk in heavy cream and cook until warm. Stir in sliced bananas and cook for 1 minute. Keep warm.
  8. Make the waffles: Preheat the waffle iron and spray with nonstick spray. Cut banana bread into 1-inch thick slices. Place slices onto the waffle grates, close the lid, and cook for 40 seconds to 1 minute, pressing slightly to crisp.
  9. Serve and enjoy: Spoon warm bananas Foster sauce over the waffles and serve immediately!

Recipe Tips:

  • Use very ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be. Look for bananas with dark spots for the best results.
  • Don’t over-mix the batter: Mix until just combined. Over-mixing can make the banana bread dense and heavy instead of soft and tender.
  • Let the banana bread rest overnight: This helps the flavors develop and makes the bread easier to slice for waffles without crumbling.
  • Press the waffle iron gently: When cooking the banana bread waffles, close the waffle iron lightly to avoid smashing the slices while still getting them crispy.
  • Make the sauce fresh: Bananas Foster sauce is best made just before serving. If it cools down too much, reheat gently on low heat to keep it smooth and creamy.

How To Store Leftovers?

  • Refrigerate: Let the banana bread waffles cool down first. Then, wrap them well or place them in an airtight container. Store in the fridge for up to 5 days.
  • Freeze: Wrap each waffle in plastic wrap and put them in a freezer bag. Keep in the freezer for up to 3 months.
